Soak the dried beans in water overnight or use a quick-soak method. Drain and rinse.

In a large pot or Dutch oven, heat vegetable oil over medium heat. Add chopped onions and bell pepper and sauté until softened, about 5-7 minutes.

Add minced garlic and cook for another minute until fragrant.

Stir in the tomato paste and paprika, cooking for 1-2 minutes until the paste darkens slightly.

Add the soaked and drained beans, sliced sausage, dried savory, and bay leaf to the pot.

Pour in enough water to cover the ingredients by about 2 inches. Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours, or until beans are tender. Add more water if needed to maintain a stew-like consistency.

Season generously with salt and black pepper to taste. Remove the bay leaf before serving.
