Classic Spaghetti Bolognese

    Finely dice pancetta, onion, carrots, and celery (soffritto). Mince garlic.

    Heat olive oil and butter in a large pot or Dutch oven over medium heat. Add pancetta and cook until crispy. Remove pancetta and set aside.

    Add onion, carrots, and celery to the pot. Cook until softened, about 10-15 minutes.

    Add minced garlic and cook for 1 minute until fragrant.

    Increase heat to medium-high. Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.

    Stir in tomato paste and cook for 1-2 minutes.

    Pour in red wine and scrape up any browned bits from the bottom of the pot. Let it simmer and reduce by half.

    Add crushed tomatoes, milk, and beef broth. Stir well. Season with salt and pepper.

    Bring the sauce to a simmer, then reduce heat to low, cover, and cook for at least 2-3 hours, stirring occasionally, until the sauce is thick and rich. Add the cooked pancetta back in the last 30 minutes.

    Meanwhile, cook spaghetti according to package directions until al dente. Drain.

    Serve the Bolognese sauce over the cooked spaghetti. Garnish with fresh basil and grated Parmesan cheese.
