  • Fettuccine pasta300g
  • Chicken breast300g
  • Cremini mushrooms250g
  • Garlic3 cloves
  • Heavy cream200ml
  • Parmesan cheese50g
  • Olive oil2 tbsp
  • Butter1 tbsp
  • Fresh parsley2 tbsp, chopped
  • Saltto taste
  • Black pepperto taste

    Cook fettuccine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

    While pasta cooks, slice chicken breast into bite-sized pieces. Slice mushrooms and mince garlic.

    Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.

    Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes. Add minced garlic and cook for 1 minute until fragrant.

    Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and sauce thickens slightly.

    Return chicken to the skillet. Add drained pasta and toss to coat everything in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

    Season with salt and black pepper to taste. Stir in chopped fresh parsley.

    Serve immediately.
