- Canned diced tomatoes800g
- Roasted red peppers (from a jar)200g, chopped
- Garlic3 cloves, minced
- Onion1/2 medium, finely chopped
- Olive oil3 tbsp
- Sirene cheese (Bulgarian white brine cheese)250g
- Fresh parsley2 tbsp, chopped
- Saltto taste
- Black pepperto taste
- Waterfor boiling pasta

Preheat oven to 190°C (375°F).

Cook pasta until al dente according to package directions in salted boiling water. Drain.

In a large oven-safe skillet or pot, heat olive oil over medium heat. Sauté onion until softened, then add minced garlic and cook for 1 minute more.

Add diced tomatoes, chopped roasted red peppers, salt, and pepper. Bring to a simmer and cook for 10 minutes.

Stir in the cooked pasta and half of the crumbled sirene cheese into the sauce. Mix well.

Sprinkle the remaining sirene cheese over the top. Bake for 20-25 minutes, or until bubbly and the cheese is lightly golden.
