  • Garam masala1 tbsp

  • Lemon juice1 tbsp
  • Saltto taste
  • Vegetable oil or Ghee2 tbsp
  • Onion, finely chopped1 large
  • Tomatoes, pureed28 oz can
  • Heavy cream1/2 cup
  • Fenugreek leaves (Kasuri Methi)1 tbsp
  • Fresh cilantro, choppedfor garnish

    Cut chicken into bite-sized pieces. In a bowl, combine yogurt, ginger-garlic paste, garam masala, turmeric, cumin, coriander, cayenne, lemon juice, and salt. Add chicken, mix well, and marinate for at least 30 minutes (or overnight in the fridge).

    Thread chicken onto skewers and grill or broil until cooked through and slightly charred. Alternatively, pan-fry until browned.

    While chicken cooks, heat oil or ghee in a large pan over medium heat. Add chopped onion and sauté until golden brown.

    Add pureed tomatoes to the pan. Cook for 5-7 minutes, stirring occasionally, until the sauce thickens.

    Stir in garam masala, turmeric, cumin, coriander, and cayenne pepper. Cook for another minute until fragrant.

    Add the cooked chicken tikka pieces to the sauce. Stir to combine.

    Pour in heavy cream and crushed fenugreek leaves. Simmer gently for 5-10 minutes, allowing flavors to meld. Do not boil vigorously after adding cream.

    Adjust salt if needed. Garnish with fresh cilantro before serving.
