- Chicken thighs, boneless, skinless1.5 lbs
- Coconut milk (full fat)1 cup
- Tamarind paste1 tbsp
- Ginger-garlic paste2 tbsp
- Red chili powder (Kashmiri for color, or regular for heat)1-2 tsp
- Turmeric powder1 tsp
- Cumin powder1 tsp
- Coriander powder1 tsp
- Garam masala1 tsp
- Saltto taste
- Vegetable oil2 tbsp
- Mustard seeds1 tsp
- Curry leaves1 sprig
- Onion, finely chopped1 large
- Tomatoes, crushed14.5 oz can
- Fresh cilantro, choppedfor garnish

Cut chicken into cubes. Marinate chicken with ginger-garlic paste, red chili powder, turmeric, cumin, coriander, garam masala, tamarind paste, and salt for at least 1 hour.

Heat 1 tbsp oil in a pan. Sear the marinated chicken until browned on all sides. Remove chicken and set aside.

In the same pan, add remaining 1 tbsp oil. Add mustard seeds and let them splutter. Add curry leaves and chopped onion, sauté until onions are golden.

Add crushed tomatoes and cook until the oil starts to separate.

Stir in remaining spices (turmeric, cumin, coriander, garam masala) and cook for 1 minute.

Add the seared chicken back to the pan. Pour in coconut milk and bring to a gentle simmer.

Cover and cook on low heat for 20-25 minutes, or until chicken is tender and the sauce has thickened. Adjust salt.

Garnish with fresh cilantro and curry leaves before serving.
