- Dried Chickpeas2 cups
- Onion1 medium
- Garlic4 cloves
- Fresh Parsley1 cup, packed
- Fresh Cilantro1/2 cup, packed
- Cumin2 tsp
- Coriander1 tsp
- Cayenne Pepper1/4 tsp
- Baking Soda1 tsp
- Saltto taste
- Black Pepperto taste
- Vegetable Oilfor frying

Soak dried chickpeas in water overnight. Drain thoroughly.

Pulse chickpeas in a food processor until coarsely ground. Do not over-process into a paste.

Add chopped onion, garlic, parsley, cilantro, cumin, coriander, cayenne, salt, and pepper to the food processor. Pulse until combined but still slightly textured.

Stir in baking soda.

Form the mixture into small balls or patties.

Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).

Carefully fry falafel in batches until golden brown and cooked through, about 3-5 minutes per side.

Remove falafel with a slotted spoon and drain on paper towels.
