
Classic Chicken Pad Thai

- Garlic, minced2 cloves

- Bean sprouts1 cup
- Garlic chives, cut into 2-inch lengths1/2 cup
- Roasted peanuts, crushed1/4 cup
- Lime wedges4
- Cilantro, fresh2 tbsp
- Tamarind paste3 tbsp
- Fish sauce3 tbsp
- Palm sugar2 tbsp
- Chili flakes (optional)1 tsp

Soak rice noodles in warm water until pliable, then drain.

In a small bowl, whisk together tamarind paste, fish sauce, palm sugar, and chili flakes (if using). Add a little water if too thick.

Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add tofu and fry until golden brown, then remove and set aside.

Add another 1 tbsp of oil to the wok. Add garlic and shallots and stir-fry until fragrant.

Add sliced chicken and stir-fry until cooked through.

Push chicken to one side of the wok. Pour beaten eggs into the empty side and scramble until almost set. Then mix with the chicken.

Add the drained noodles and the tamarind sauce mixture to the wok. Toss well to coat the noodles evenly.

Add bean sprouts, garlic chives, and fried tofu. Stir-fry for 1-2 minutes until bean sprouts are slightly tender-crisp.

Season with salt and pepper to taste. If noodles seem dry, add a splash of water.

Serve immediately, garnished with crushed peanuts, fresh cilantro, and lime wedges.
