  • Bean sprouts50 g

    Cook chicken: Boil or pan-fry chicken thighs until cooked through. Let cool slightly, then slice thinly.

    Prepare the broth base: In a pot, combine water, grated ginger, minced garlic, and chicken broth powder. Bring to a simmer.

    Make the miso base: In a small bowl, whisk together white miso paste, red miso paste, chili bean paste, soy sauce, and sesame oil until smooth.

    Combine broth and miso: Ladle about 1 cup of the simmering broth into the miso mixture and whisk well to temper the miso. Pour this mixture back into the pot with the rest of the broth. Heat gently, but do not boil after adding miso, as it can affect the flavor and aroma.

    Cook noodles: Cook ramen noodles in a separate pot of boiling water according to package directions. Drain well.

    Assemble the ramen: Divide the cooked noodles between two bowls. Ladle the hot spicy miso broth over the noodles. Arrange the sliced chicken, corn kernels, and bean sprouts on top. Garnish with chopped scallions.
