- Potato starch1 cup
- Vegetable oil for frying4 cups
- Gochujang (Korean chili paste)3 tbsp
- Soy sauce2 tbsp
- Rice vinegar1 tbsp
- Honey3 tbsp
- Garlic, minced4 cloves
- Garlic, thinly sliced2 cloves
- Gochugaru (Korean chili flakes)1 tsp
- Sesame oil1 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Water1/4 cup

Pat chicken pieces dry and season with salt and pepper.

Toss chicken pieces with potato starch until well coated.

Heat vegetable oil to 350°F (175°C) and fry chicken in batches for 8-10 minutes until golden. Drain.

Increase oil temperature to 375°F (190°C) and re-fry chicken for 1-2 minutes until extra crispy. Drain.

In a saucepan, combine gochujang, soy sauce, rice vinegar, honey, minced garlic, gochugaru, and water. Simmer until sauce thickens.

Stir in sesame oil and thinly sliced garlic.

In a large bowl, toss the double-fried chicken with the spicy garlic sauce until fully coated.
