
Traditional Banitsa with Leeks (Баница с праз)

A classic Bulgarian savory pastry made with layers of thin phyllo dough filled with a mixture of leeks, sirene cheese, and eggs, then baked until golden brown and crispy.

- Phyllo dough sheets1 package (approx. 400-500g)
- Leeks500g
- Sirene cheese (Bulgarian white brine cheese)300g
- Eggs3 large
- Yogurt100g
- Butter100g
- Vegetable oil50ml
- Saltto taste
- Black pepperto taste

Clean and thinly slice the leeks. Sauté them in a pan with a little oil and butter until softened.

Crumble the sirene cheese into a bowl. Add the sautéed leeks, beaten eggs, yogurt, salt, and pepper. Mix well.

Melt the butter. Brush a baking dish with melted butter and oil.

Lay one sheet of phyllo dough in the dish, brush with melted butter. Repeat with 3-4 more sheets, brushing each one.

Spread half of the leek and cheese filling over the phyllo layers.

Layer another 4-5 sheets of phyllo dough on top, brushing each with butter.

Spread the remaining filling over the phyllo.

Top with the remaining phyllo sheets, brushing each with butter. Tuck the edges in.

Score the top layer of phyllo into serving portions.

Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until golden brown and crispy.
