
Traditional Banitsa with Spinach and Sirene

A classic Bulgarian banitsa, a savory pastry made with layers of filo dough, a filling of spinach, crumbled sirene cheese, eggs, and yogurt, baked until golden brown and flaky.

- Filo dough1 package (approx. 400g)
- Fresh spinach500g
- Sirene cheese (Bulgarian white brine cheese)300g
- Eggs3 large
- Plain yogurt150g
- Butter, melted100g
- Vegetable oil50ml
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a baking dish.

Wash and finely chop the fresh spinach. Squeeze out excess water.

Crumble the sirene cheese into a bowl. Add the chopped spinach, eggs, yogurt, salt, and pepper. Mix well to combine.

Unroll the filo dough. Keep it covered with a damp cloth to prevent drying.

Lay one sheet of filo dough in the greased baking dish. Brush generously with melted butter and vegetable oil mixture.

Repeat with another sheet of filo dough, brushing with butter and oil. Continue layering and brushing until you have used about half of the filo sheets.

Spread the spinach and cheese filling evenly over the layered filo dough.

Layer the remaining filo sheets on top of the filling, brushing each sheet with the butter and oil mixture.

Tuck the edges of the top filo sheets under the banitsa.

Brush the top layer generously with the remaining butter and oil mixture.

Score the top of the banitsa into serving portions (squares or diamonds).

Bake for 30-40 minutes, or until the banitsa is golden brown and crispy.
