
Quick Katmi with Farmer's Cheese

A simplified version of traditional katmi, using farmer's cheese as a quicker-to-prepare filling. The dough is similar, but the filling requires less cooking time.

- Water1/2 cup
- Salt1 teaspoon
- Farmer's cheese (Tvorog)1.5 cups
- Sugar1 tablespoon
- Lemon zest1 teaspoon
- Butter2 tablespoons, melted
- Fresh parsley1 tablespoon, chopped

Prepare the dough: Combine flour and salt. Whisk egg and water. Gradually mix wet into dry ingredients until a dough forms. Knead for 5 minutes until smooth. Cover and rest for 20 minutes.

Prepare the filling: In a bowl, mix farmer's cheese, sugar, and lemon zest until well combined.

Assemble the katmi: Roll out dough thinly. Cut circles. Place about 1 tablespoon of cheese filling in the center of each circle. Fold dough in half and press edges to seal, forming crescent shapes.

Boil the katmi: Bring salted water to a boil. Cook katmi in batches for 4-6 minutes after they float. Ensure dough is cooked through.

Serve: Drain katmi and toss with melted butter. Garnish with fresh parsley.
