
Traditional Bulgarian Chicken Noodle Soup (Пилешка супа с фиде)

A comforting and classic Bulgarian chicken noodle soup, rich with tender chicken, vegetables, and fine noodles, finished with a tangy egg-lemon sauce.

- Water2.5 liters
- Carrots2 medium
- Onion1 medium
- Celery stalk1
- Parsley root1
- Fine noodles (фиде)100g
- Eggs2 large
- Lemon1
- Saltto taste
- Black pepperto taste
- Fresh dillfor garnish

Place chicken in a large pot, cover with water, add salt and pepper. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until chicken is cooked through. Skim off any foam.

Remove chicken from the pot, set aside to cool. Strain the broth and return it to the pot.

Peel and finely dice carrots, onion, and celery. Grate the parsley root. Add the vegetables to the broth.

Bring the broth to a boil, then reduce heat and simmer for 15-20 minutes, until vegetables are tender.

While vegetables cook, shred or dice the cooked chicken meat.

Add the fine noodles (фиде) to the boiling soup and cook according to package directions, usually 5-7 minutes.

In a separate bowl, whisk together eggs and lemon juice. Gradually temper the egg mixture by slowly whisking in about 1 cup of hot broth.

Pour the tempered egg mixture back into the soup pot, stirring constantly. Do not boil after adding the egg mixture.

Stir in the shredded chicken. Adjust seasoning with salt and pepper if needed.

Serve hot, garnished with fresh dill.
