A traditional Bulgarian dish featuring tender boiled beef simmered with root vegetables and seasoned simply. This hearty and comforting meal is a staple in Bulgarian homes.

- Carrots3-4 medium
- Potatoes3-4 medium
- Parsnips2 medium
- Celery root1 small
- Onion1 large
- Bay leaves2-3
- Peppercorns1 tsp
- Saltto taste

Rinse the beef and place it in a large pot. Cover with cold water.

Bring to a boil, then reduce heat and skim off any foam that rises to the surface.

Add the whole onion, bay leaves, and peppercorns to the pot. Season lightly with salt.

Simmer gently, covered, for about 1.5 to 2 hours, or until the beef is tender.

While the beef is simmering, peel and chop the carrots, potatoes, parsnips, and celery root into large, bite-sized pieces.

Once the beef is tender, remove it from the pot and set aside. Strain the broth and discard the solids (onion, bay leaves, peppercorns).

Return the strained broth to the pot. Add the chopped vegetables.

Bring the broth back to a boil, then reduce heat and simmer until the vegetables are tender, about 20-30 minutes.

Cut the cooked beef into serving pieces and add it back to the pot with the vegetables for the last 5-10 minutes of cooking to heat through.

Adjust seasoning with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
