Sear the beef pieces in a hot pot for a rich flavor base, then remove.

Add chopped leek and garlic to the pot and sauté until softened.

Return beef to the pot. Cover with cold water. Add parsley stems, thyme, bay leaf, salt, and pepper.

Bring to a boil, then reduce heat and simmer gently for 1.5 hours, skimming foam as needed.

Peel and cut carrots and potatoes into large chunks. Add to the pot.

Continue simmering for another 45-60 minutes, until beef and vegetables are very tender.

Remove beef and vegetables. Strain the broth, discarding solids. Skim excess fat if desired.
