  • Water1.5 liters
  • Saltto taste

    Soak the dried beans in cold water overnight. Drain and rinse.

    In a large pot, combine the soaked beans with fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour until partially tender. Skim off any foam.

    While beans are simmering, dice the smoked sausage into bite-sized pieces. Finely chop the onion, carrots, celery, and leek. Mince the garlic.

    In a separate pan, heat the olive oil over medium heat. Add the diced sausage and cook until lightly browned and some fat has rendered. Remove sausage and set aside, leaving fat in the pan.

    Add the chopped onion, carrots, celery, and leek to the pan with the sausage fat. Sauté until softened, about 8-10 minutes.

    Add the minced garlic and cook for 1 minute until fragrant.

    Stir in the tomato paste, dried mint, and dried savory. Cook for 1-2 minutes.

    Add the sautéed vegetables and spices to the pot with the partially cooked beans. Add the cooked sausage back to the pot.

    Continue to simmer for another 45-60 minutes, or until beans are fully tender and the soup has thickened. Add more water if needed.

    Season with salt and black pepper to taste. Be mindful of the saltiness from the sausage.

    Serve hot, garnished with fresh parsley and a slice of sausage.
