- Dark chocolate (60% cocoa)200g
- Heavy cream400ml
- Powdered sugar50g
- Vanilla extract1 tsp
- Water2 tbsp

Melt dark chocolate with 2 tbsp water in a heatproof bowl over simmering water (or in microwave in short bursts), stirring until smooth. Let cool slightly.

In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.

Gently fold about one-third of the whipped cream into the cooled melted chocolate to lighten it.

Fold the chocolate mixture back into the remaining whipped cream until just combined. Do not overmix.

Spoon the mousse into individual serving glasses or bowls. Chill for at least 1 hour before serving.
