- Sour cream100g

Clean and slice the mushrooms. Finely chop the onion and dice the carrots and potatoes.

In a large pot, melt the butter over medium heat. Sauté the chopped onion until softened, about 5 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 10-15 minutes.

Stir in the flour and cook for 1 minute, stirring constantly, to form a roux.

Gradually whisk in the water, ensuring no lumps form. Bring to a simmer.

Add the diced potatoes and carrots. Cook until the vegetables are tender, about 15-20 minutes.

In a separate bowl, whisk together the milk and sour cream. Temper this mixture by gradually adding a ladleful of hot soup, then stir it back into the pot.

Simmer gently for another 5 minutes, but do not boil. Season with salt and black pepper to taste.
