Clean and chop the mushrooms. Finely chop the onion, celery, and mince the garlic.

Rinse the pearl barley under cold water.

Heat olive oil in a large pot over medium heat. Sauté the onion and celery until softened, about 7 minutes.

Add the chopped mushrooms and minced garlic. Cook until mushrooms are browned and tender, about 10-12 minutes.

Stir in the rinsed pearl barley and dried thyme. Cook for 1 minute, stirring.

Pour in the broth. Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until barley is tender and cooked through.

Season with salt and black pepper to taste. Add water if the soup becomes too thick.
