- Potatoes500g
- Carrots2 medium
- Onion1 medium
- Garlic2 cloves
- Vegetable broth1 liter
- Olive oil2 tbsp
- Fresh dill2 tbsp, chopped
- Fresh parsley2 tbsp, chopped
- Saltto taste
- Black pepperto taste
- Wateras needed
- Yogurt or sour cream (optional)for garnish

Peel and dice the potatoes, carrots, and onion. Mince the garlic.

Heat olive oil in a large pot over medium heat. Sauté the onion until softened, about 5 minutes.

Add the minced garlic and sauté for another minute until fragrant.

Add the diced potatoes and carrots to the pot. Stir to coat with oil.

Pour in the vegetable broth and enough water to cover the vegetables. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until the vegetables are tender.

Season with salt and black pepper to taste.

Stir in most of the fresh dill and parsley. Reserve some for garnish.

Serve hot, garnished with remaining herbs and a dollop of yogurt or sour cream if desired.
