- Onion1 medium
- Garlic2 cloves
- Butter2 tablespoons
- Vegetable broth4 cups
- Heavy cream1 cup

Wash and chop cauliflower into florets. Peel and chop onion. Mince garlic.

Melt butter in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Add cauliflower florets and vegetable broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until cauliflower is very tender.

Carefully transfer the soup to a blender (or use an immersion blender) and blend until very smooth. Work in batches if necessary.

Return the pureed soup to the pot. Stir in heavy cream and nutmeg. Heat gently over low heat, do not boil.

Season with salt and black pepper to taste. Serve hot, garnished with fresh chives.
