- Vegetable broth1 liter
- Olive oil2 tbsp
- Paprika1 tsp
- Mint (dried)1 tsp

Rinse the red lentils thoroughly.

Finely chop the onion, carrot, and garlic.

Heat olive oil in a large pot over medium heat. Sauté the onion and carrot until softened, about 5-7 minutes.

Add the garlic and sauté for another minute until fragrant.

Stir in the paprika and dried mint, cook for 30 seconds.

Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until lentils are very soft.

Carefully blend the soup using an immersion blender or a regular blender until smooth. Add water if needed to reach desired consistency.

Season with salt and black pepper to taste. Reheat gently if necessary.
