A classic and comforting Bulgarian tomato soup, rich with the flavor of ripe tomatoes and tender vermicelli noodles. This is a staple in Bulgarian homes, often served as a light lunch or starter.

- Ripe tomatoes1 kg
- Onion1 medium
- Garlic2 cloves
- Vegetable oil2 tbsp
- Water1.5 liters
- Vermicelli noodles (фиде)100 g
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish
- Optional: Sour cream or yogurtfor serving

Peel and finely chop the onion and garlic.

Wash and roughly chop the tomatoes. You can blanch and peel them first for a smoother soup.

Heat the vegetable oil in a large pot over medium heat. Sauté the chopped onion until softened, about 5-7 minutes.

Add the chopped garlic and sauté for another minute until fragrant.

Add the chopped tomatoes to the pot. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes break down.

Pour in the water and bring to a boil. Reduce heat and simmer for 15 minutes.

Carefully blend the soup using an immersion blender or transfer to a regular blender until smooth. Return to the pot if using a regular blender.

Bring the soup back to a gentle simmer. Add the vermicelli noodles and cook according to package directions, usually 3-5 minutes, until tender.

Season with salt and black pepper to taste.

Serve hot, garnished with fresh chopped parsley. Optionally, serve with a dollop of sour cream or yogurt.
