
Traditional Kurban Chorba

A rich and hearty lamb soup, traditionally prepared for religious holidays, especially Kurban Bayram. It features tender lamb, vegetables, and aromatic spices, slow-cooked to perfection.

- Lamb shoulder1 kg
- Onions2 large
- Carrots3 medium
- Potatoes2 medium
- Bell pepper (red)1 large
- Tomatoes400g (canned or fresh)
- Garlic4 cloves
- Lamb broth or water2 liters
- Vegetable oil or lamb fat3 tbsp
- Paprika (sweet)1 tbsp
- Dried mint1 tsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Cut lamb into large cubes. Brown the lamb in oil or fat in a large pot.

Add chopped onions and sauté until softened.

Add chopped carrots, bell pepper, and minced garlic. Cook for another 5 minutes.

Stir in paprika and dried mint.

Add diced tomatoes and cook for 2-3 minutes.

Pour in the lamb broth or water. Bring to a boil, then reduce heat, cover, and simmer for at least 1.5-2 hours, or until lamb is very tender.

Add cubed potatoes and cook for another 20-30 minutes until tender.

Season with salt and black pepper to taste.

Serve hot, garnished with fresh parsley.
