
Classic Bulgarian Moussaka with Potatoes and Minced Meat

A traditional Bulgarian moussaka featuring layers of thinly sliced potatoes and seasoned minced meat, baked in a rich, creamy egg and yogurt custard. This is the quintessential comfort food.

- Ground Pork500 g
- Onions2 medium
- Eggs4 large
- Plain Yogurt400 g
- Butter50 g
- Vegetable Oil50 ml
- Tomato Paste2 tbsp
- Mint (dried)1 tsp
- Saltto taste
- Black Pepperto taste

Peel and thinly slice the potatoes. Boil them in salted water for about 5-7 minutes until slightly tender, then drain.

Finely chop the onions and sauté them in vegetable oil until translucent. Add the ground pork and cook until browned, breaking it up with a spoon.

Stir in the tomato paste and dried mint. Cook for another 2 minutes. Season with salt and pepper.

Grease a baking dish with butter. Layer half of the sliced potatoes, followed by the meat mixture, and then the remaining potatoes.

In a separate bowl, whisk together the eggs and yogurt until smooth. Pour this mixture evenly over the moussaka.

Dot the top with small pieces of butter. Bake in a preheated oven at 180°C (350°F) for 40-50 minutes, or until the topping is golden brown and set.

Let it rest for 10-15 minutes before serving.
