
Traditional Zucchini Moussaka (Мусака от тиквички)

- Ground Pork or Beef500 g
- Onions2 large
- Eggs4 large
- Plain Yogurt400 g
- Vegetable Oil100 ml
- Tomato Paste2 tbsp
- Fresh Parsley1 bunch
- Saltto taste

Slice zucchini into 1 cm thick rounds. Salt them and let them sit for 30 minutes to release water, then pat dry.

Fry the zucchini slices in vegetable oil until golden brown on both sides. Set aside.

Finely chop the onions and sauté them in oil until softened.

Add the ground meat to the onions and cook until browned. Stir in the tomato paste, salt, and pepper.

In a greased baking dish, layer half of the fried zucchini, then the meat mixture, and finally the remaining zucchini.

In a separate bowl, whisk together the yogurt and eggs. Pour this mixture evenly over the moussaka.

Bake in a preheated oven at 180°C (350°F) for 40-50 minutes, or until the topping is set and golden brown.

Let it cool slightly before serving. Garnish with chopped fresh parsley.
