- Ground pork or beef500g
- Rice1 cup
- Onions2 medium
- Tomatoes, crushed or pureed400g
- Tomato paste2 tbsp
- Vegetable oil3 tbsp
- Fresh parsley, chopped1/4 cup
- Dried mint1 tsp
- Paprika1 tsp
- Saltto taste
- Black pepperto taste

Wash the bell peppers and carefully remove the tops and seeds, keeping the shells intact.

Finely chop one onion. Sauté it in 2 tbsp of vegetable oil until softened. Add the ground meat and cook until browned, breaking it up with a spoon.

Rinse the rice and add it to the meat mixture. Stir in chopped parsley, dried mint, paprika, salt, and pepper. Cook for 2-3 minutes, stirring.

Stuff the peppers with the meat and rice mixture, filling them about 3/4 full.

Arrange the stuffed peppers upright in a deep baking dish.

In a separate bowl, mix the crushed tomatoes, tomato paste, remaining 1 tbsp oil, salt, and pepper. Add enough water to create a sauce that comes about halfway up the peppers.

Pour the tomato sauce around the peppers in the baking dish.

Cover the dish with foil and bake in a preheated oven at 180°C (350°F) for about 60-75 minutes, or until the peppers are tender and the rice is cooked.

Remove foil for the last 15 minutes of baking if you want a slightly browned top.

Serve hot, optionally with a dollop of yogurt or sour cream.
