- White beans (e.g., Great Northern or Cannellini)2 cups cooked
- Rice (e.g., Arborio or medium-grain)1/2 cup uncooked
- Onions2 medium
- Tomatoes (canned crushed or fresh)1 cup
- Tomato paste2 tablespoons
- Vegetable oil1/4 cup
- Fresh parsley1/4 cup chopped
- Dried mint1 teaspoon
- Paprika1 teaspoon
- Saltto taste
- Black pepperto taste
- Water1 cup

Wash bell peppers, cut off the tops, and remove seeds and membranes. Blanch peppers in boiling water for 2-3 minutes, then drain.

Finely chop one onion and sauté in vegetable oil until softened. Add the uncooked rice and sauté for another minute.

Stir in cooked beans, crushed tomatoes, tomato paste, chopped parsley, dried mint, paprika, salt, and pepper. Mix well.

Stuff the blanched peppers with the bean and rice mixture. Place the stuffed peppers upright in a baking dish.

Pour water into the baking dish around the peppers. Cover the dish with foil.

Bake in a preheated oven at 180°C (350°F) for 45-60 minutes, or until peppers are tender and the filling is cooked through. Remove foil for the last 10-15 minutes if you want a slightly browned top.
