Съставки

  • Pork shoulder1.5 kg
  • Onions1 kg
  • Red wine250 ml
  • Pork broth or water200 ml
  • Bay leaves2
  • Black peppercorns1 tsp
  • Saltto taste
  • Vegetable oil2 tbsp

    Cut the pork shoulder into large cubes. Season generously with salt and black pepper.

    Slice the onions thinly.

    In a large clay pot or heavy-bottomed casserole dish, layer half of the sliced onions, then the pork cubes, then the remaining onions. Add bay leaves and peppercorns.

    Pour in the red wine and pork broth (or water). Drizzle with vegetable oil.

    Cover the pot tightly with a lid or foil. Bake in a preheated oven at 160°C (320°F) for 3-4 hours, or until the meat is very tender.

    Remove the lid for the last 30 minutes of cooking to allow the top to brown slightly.

    Let it rest for 15 minutes before serving.
