- Red wine vinegar1 tablespoon

Preheat oven to 200°C (400°F). Place bell peppers on a baking sheet and roast for 25-30 minutes, turning occasionally, until skins are blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel, seed, and chop the roasted peppers.

Dice the tomatoes and cucumber into bite-sized pieces.

Finely chop the onion.

Combine the diced tomatoes, cucumber, chopped onion, and roasted peppers in a large bowl.
