
Traditional Bulgarian Fried Peppers with Sirene Cheese

- Sirene cheese (Bulgarian white brine cheese)200g

Roast or grill the bell peppers until the skin is charred. Place them in a bowl, cover with plastic wrap, and let steam for 10-15 minutes. Peel off the skin, cut the peppers in half lengthwise, and remove the seeds.

In a separate bowl, crumble the sirene cheese. Beat the eggs and mix them with the crumbled cheese. Season with a pinch of salt and pepper.

Stuff the halved peppers with the sirene cheese mixture.

Prepare a dredging station: one plate with flour, and another with the egg and cheese mixture.

Dip each stuffed pepper half first into the flour, then into the egg and cheese mixture, ensuring it's well coated.

Heat vegetable oil in a frying pan over medium-high heat. Carefully place the coated peppers into the hot oil.

Fry the peppers for 3-5 minutes per side, until golden brown and crispy. Drain on paper towels.
