Preheat oven to 190°C (375°F).

Rinse and pat dry the chicken.

In a bowl, combine olive oil, minced garlic, paprika, salt, and pepper.

Rub the paprika-garlic mixture all over the chicken, ensuring it's well coated.

Place the chicken in a roasting pan. Pour water into the bottom of the pan.

Roast for 1 hour and 20 minutes, basting with pan juices every 20 minutes. If the skin starts to brown too quickly, loosely tent with foil.

Let rest for 10 minutes before carving. Garnish with fresh dill.
