A traditional Bulgarian dish featuring pan-fried chicken livers with onions, peppers, and often a touch of tomato and wine, served rustic style.

- Onions2 medium
- Red bell pepper1 large
- Garlic2 cloves
- White wine100ml
- Tomato paste1 tbsp
- Butter2 tbsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Clean the chicken livers and pat them dry.

Slice the onions and red bell pepper into thin strips. Mince the garlic.

Heat vegetable oil and butter in a large skillet over medium-high heat.

Add the onions and bell pepper and sauté until softened, about 5-7 minutes.

Add the chicken livers to the skillet and cook until browned on all sides, about 3-5 minutes.

Stir in the minced garlic and tomato paste, cook for 1 minute.

Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until slightly reduced.

Season with salt and black pepper to taste.
