- Onions2 large
- Red bell pepper1 large
- Mushrooms200g
- Garlic3 cloves
- Vegetable oil4 tbsp
- Sweet paprika1 tbsp
- Dry white wine100ml
- Tomato paste1 tbsp
- Fresh parsley2 tbsp, chopped

Clean and slice the pork liver into bite-sized pieces. Season with salt and pepper.

Chop the onions, dice the bell pepper, and slice the mushrooms. Mince the garlic.

Heat vegetable oil in a large skillet over medium-high heat. Add the liver and sear until browned on all sides. Remove liver and set aside.

In the same skillet, add the chopped onions and sauté until softened and golden. Add the diced bell pepper and sliced mushrooms, cook for another 5-7 minutes until tender.

Stir in the minced garlic, sweet paprika, and tomato paste. Cook for 1 minute until fragrant.

Pour in the dry white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.

Return the seared liver to the skillet. Add water, bring to a simmer, cover, and cook for 10-15 minutes, or until the liver is tender and cooked through.

Adjust seasoning with salt and pepper if needed. Stir in chopped fresh parsley just before serving.
