
Classic Roasted Duck Legs with Herbs

- Fresh thyme2 sprigs
- Garlic4 cloves, smashed
- Onion1, quartered
- White wine1/2 cup
- Water1/2 cup

Preheat oven to 160°C (320°F).

Pat the duck legs dry with paper towels. Score the skin in a crosshatch pattern, being careful not to cut into the meat.

Season the duck legs generously with salt and black pepper.

Place the duck legs, skin-side up, in a roasting pan. Tuck the rosemary, thyme, garlic, and onion around the legs.

Pour the white wine and water into the bottom of the roasting pan.

Cover the roasting pan tightly with foil.

Roast for 2.5 to 3 hours, or until the meat is very tender and falling off the bone.

Remove the foil and increase oven temperature to 200°C (400°F). Roast for another 15-20 minutes, or until the skin is golden brown and crispy.

Let the duck legs rest for 10 minutes before serving.
