Wash and peel the potatoes. Cut them into uniform cubes or slices, about 1/2 inch thick.

Heat the cooking oil in a large skillet or frying pan over medium-high heat on the stove.

Add the potatoes to the hot oil in a single layer. Avoid overcrowding the pan; cook in batches if necessary.

Season generously with salt and black pepper.

Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender on the inside and golden brown and crispy on the outside.
