Ingredients
- Nilla Wafers1 box (11-12 oz)
- Ripe Bananas3-4 large
- Granulated Sugar1 1/2 cups
- All-Purpose Flour1/2 cup
- Salt1/4 teaspoon
- Milk3 cups
- Large Egg Yolks4
- Unsalted Butter2 tablespoons
- Vanilla Extract1 teaspoon

Preheat oven to 350°F (175°C).

Arrange a layer of Nilla wafers in the bottom of a 9x13 inch baking dish.

Slice bananas and arrange a layer over the wafers.

In a medium saucepan, whisk together sugar, flour, and salt.

Gradually whisk in milk until smooth.

Cook over medium heat, stirring constantly, until thickened and bubbly, about 5-7 minutes.

Temper the egg yolks by whisking about 1 cup of the hot milk mixture into the yolks. Then, whisk the tempered yolks back into the saucepan with the remaining milk mixture.

Cook for another 1-2 minutes, stirring constantly, until the custard is thick. Do not boil.

Remove from heat and stir in butter and vanilla extract until butter is melted and incorporated.

Pour half of the hot custard over the banana and wafer layer.

Repeat layers: wafers, bananas, and then the remaining custard.

Bake for 20-25 minutes, or until the top is lightly golden and the pudding is set.

Let cool completely before serving. Can be served warm or chilled.
