Ingredients
- Brown Lentils1 cup
- Italian Sausage1/2 lb
- Carrots2 medium
- Celery Stalks2
- Yellow Onion1 medium
- Garlic Cloves3
- Chicken Broth6 cups
- Kale2 cups, chopped
- Olive Oil1 tablespoon
- Red Pepper Flakes1/4 teaspoon
- Saltto taste

Rinse the brown lentils.

Dice carrots, celery, and onion. Mince garlic.

In a large pot, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Remove sausage with a slotted spoon and set aside, leaving drippings in the pot.

Add olive oil to the pot if needed. Add diced carrots, celery, and onion. Sauté until softened, about 8 minutes.

Add minced garlic and red pepper flakes. Cook for 1 minute until fragrant.

Stir in the rinsed lentils, chicken broth, and the cooked sausage.

Bring to a boil, then reduce heat, cover, and simmer for 45-55 minutes, or until lentils are tender.

Stir in the chopped kale and cook for another 5-7 minutes until wilted.

Season with salt and black pepper to taste.
