Ingredients
- Chicken breast, cut into bite-sized pieces1.5 lbs
- Soy sauce1/3 cup
- Rice vinegar3 tbsp
- Hoisin sauce2 tbsp
- Sugar2 tbsp
- Ketchup1 tbsp
- Cornstarch2 tbsp
- Garlic, minced2 cloves
- Ginger, grated1 tsp
- Broccoli florets1 cup
- Red bell pepper, sliced1/2
- Vegetable oil2 tbsp
- Scallions, chopped2
- Sesame seeds, toasted1 tsp
- Saltto taste
- Black pepperto taste
- Water1/4 cup

In a bowl, toss chicken pieces with 1 tbsp cornstarch, salt, and pepper.

In a separate bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, ketchup, remaining 1 tbsp cornstarch, and 1/4 cup water to make the sauce.

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned. Remove chicken from wok.

Add the remaining 1 tbsp vegetable oil to the wok. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.

Add broccoli florets and red bell pepper to the wok. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Return the cooked chicken to the wok. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything.

Cook for another 1-2 minutes, stirring constantly, until the sauce thickens and glazes the ingredients.

Garnish with chopped scallions and toasted sesame seeds. Serve immediately.
