- Corned beef, cooked and diced2 cups
- Potatoes, peeled and diced2 cups
- Yellow onion, diced1 cup
- Butter or oil2 tablespoons

In a large skillet, melt butter or heat oil over medium-high heat.

Add diced potatoes and cook until they begin to soften and brown, about 8-10 minutes.

Add diced onion and cook until softened and translucent, about 5 minutes.

Add the diced corned beef to the skillet. Season with salt and pepper.

Cook, stirring occasionally, until the corned beef is heated through and slightly crisped, and the potatoes are tender and golden brown, about 10-15 minutes.
