Ingredients
- Fideos noodles (thin vermicelli)300g
- Shrimp150g
- Mussels150g
- Clams150g
- Fish broth800ml
- Olive oil4 tbsp
- Onion1 medium
- Garlic3 cloves
- Tomatoes2 ripe
- Red bell pepper1/2
- Saffron threads1 pinch
- Smoked paprika1 tsp
- Dry white wine100ml
- Lime1
- Fresh cilantrosmall bunch
- Saltto taste
- Black pepperto taste

Prepare seafood: clean mussels and clams, peel and devein shrimp.

Finely chop onion and garlic. Grate tomatoes. Dice red bell pepper.

Heat olive oil in a paella pan over medium heat. Sauté onion until softened, add garlic and bell pepper, cook for 5 minutes.

Add grated tomatoes and smoked paprika. Cook for 5 minutes until thickened.

Add fideos noodles and toast them in the mixture for 2-3 minutes until lightly golden.

Pour in white wine and let it evaporate.

Add warm fish broth infused with saffron. Season with salt and pepper. Bring to a boil.

Reduce heat to medium and simmer for about 8-10 minutes, stirring occasionally, until noodles are al dente.

Arrange shrimp, mussels, and clams on top. Cover and cook for another 5-7 minutes until seafood is cooked and mussels/clams have opened.

Remove from heat, garnish with cilantro and lime wedges. Let rest for 3 minutes.
