Ingredients
- Chicken breast1 lb
- Coconut milk1 can (13.5 oz)
- Chicken broth3 cups
- Ginger1 inch, thinly sliced (substitute for galangal)
- Lemongrass1 stalk, bruised
- Lime juice2 tbsp
- Fish sauce2 tbsp
- Red curry paste1 tbsp (for flavor and color)
- Mushrooms1 cup, sliced
- Green onions2 tbsp, chopped (for garnish)

Cut chicken breast into bite-sized pieces.

In a pot, combine coconut milk, chicken broth, sliced ginger, bruised lemongrass, and red curry paste. Bring to a simmer.
