Ingredients
- Sushi rice3 cups
- Rice vinegar1/4 cup
- Sugar1 tbsp
- Salt1/2 tsp
- Nori sheets4
- Imitation crab sticks4
- Avocado1
- Cucumber1/2
- Toasted sesame seeds1/4 cup
- Soy saucefor serving
- Wasabi pastefor serving

Prepare sushi rice and season with vinegar mixture (rice vinegar, sugar, salt) as described for Classic Tuna Nigiri.

Cut imitation crab sticks in half lengthwise. Peel and pit avocado, then slice into strips. Cut cucumber into thin matchsticks.

Place a sheet of nori, shiny side down, on a bamboo rolling mat (makisu).

Spread a thin, even layer of sushi rice over the nori, leaving about a 1/2 inch border at the top. Sprinkle toasted sesame seeds over the rice.

Carefully flip the nori sheet over so the rice side is down on the mat.

Arrange the crab sticks, avocado slices, and cucumber sticks horizontally across the bottom edge of the nori.

Using the bamboo mat, tightly roll the sushi from the bottom up, pressing gently to form a compact cylinder.

Remove the roll from the mat. Wet a sharp knife and slice the roll into 6-8 pieces.

Repeat with remaining ingredients. Serve with soy sauce, wasabi, and pickled ginger.
