Ingredients
- Sushi rice3 cups
- Rice vinegar1/4 cup
- Sugar1 tbsp
- Salt1/2 tsp
- Nori sheets4
- Fresh salmon (sushi-grade)8 oz
- Japanese mayonnaise3 tbsp
- Sriracha or chili garlic sauce1-2 tsp
- Cucumber or Avocado1/2
- Sesame seeds (optional)2 tbsp
- Soy saucefor serving
- Wasabi pastefor serving
- Pickled gingerfor serving

Prepare sushi rice and season with vinegar mixture (rice vinegar, sugar, salt).

Finely dice the sushi-grade salmon. In a small bowl, mix the diced salmon with Japanese mayonnaise and sriracha until well combined and spicy.

Prepare fillings: slice cucumber or avocado into thin strips.

Place a sheet of nori, shiny side down, on a bamboo rolling mat.

Spread a thin layer of sushi rice over the nori, leaving a border at the top. Sprinkle with sesame seeds if using.

Flip the nori sheet over so the rice side is down.

Spoon the spicy salmon mixture horizontally across the bottom edge of the nori. Add cucumber or avocado strips next to it.

Roll tightly using the bamboo mat, pressing gently to form a cylinder.

Wet a sharp knife and slice the roll into 6-8 pieces.

Repeat with remaining ingredients. Serve with soy sauce, wasabi, and pickled ginger.
