Ingredients
- Spring roll wrappers25-30 sheets
- Ground pork1 lb
- Carrot, finely diced1/2 cup
- Onion, finely diced1/4 cup
- Garlic, minced2 cloves
- Soy sauce2 tbsp
- Egg, beaten1
- Vegetable oil, for frying4 cups
- Saltto taste
- Black pepperto taste

In a bowl, combine ground pork, diced carrot, diced onion, minced garlic, soy sauce, beaten egg, salt, and pepper. Mix well.

Place a tablespoon of the filling onto one corner of a spring roll wrapper. Fold the wrapper over the filling, tuck in the sides, and roll tightly to seal. Moisten the edge with water if needed.

Repeat with the remaining filling and wrappers.

Heat vegetable oil in a deep pan or wok over medium-high heat. Carefully fry the spring rolls in batches until golden brown and crispy, about 3-5 minutes.

Remove spring rolls with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
