Ingredients
- Spaghetti or ramen noodles400g
- Ground chicken or pork150g
- Chili oil3 tbsp
- Peanut butter2 tbsp
- Soy sauce3 tbsp
- Rice vinegar1 tbsp
- Sesame oil1 tsp
- Garlic powder1 tsp
- Optional: preserved mustard greens (Zha Cai), finely chopped2 tbsp
- Scallions, chopped2 tbsp
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste

Cook the meat: Heat vegetable oil in a skillet over medium-high heat. Add ground chicken/pork and cook until browned. Season with salt and pepper. If using, stir in chopped preserved mustard greens.

Prepare the sauce: In a bowl, whisk together chili oil, peanut butter, soy sauce, rice vinegar, sesame oil, and garlic powder. Add a little hot water if the sauce is too thick.

Cook the noodles: Cook spaghetti or ramen noodles according to package directions until al dente. Drain well.

Assemble the noodles: Divide the sauce among four bowls. Add the cooked noodles and toss to coat. Top with the cooked meat mixture and chopped scallions.
