Ingredients
- Paneer400g
- Yogurt (full fat)1 cup
- Ginger-garlic paste2 tbsp
- Lemon juice1 tbsp
- Garam masala1 tsp
- Turmeric powder1/2 tsp
- Red chili powder1 tsp
- Cumin powder1 tsp
- Coriander powder1 tsp
- Saltto taste
- Tomatoes (pureed)2 cups
- Onions (finely chopped)1 large
- Cashews (soaked and ground to paste)1/4 cup
- Heavy cream1/2 cup
- Fenugreek leaves (Kasuri methi)1 tbsp
- Ghee or Oil3 tbsp
- Green chilies (slit)2
- Fresh cilantro (chopped)for garnish

Cut paneer into cubes. In a bowl, combine yogurt, ginger-garlic paste, lemon juice, garam masala, turmeric, red chili powder, cumin powder, coriander powder, and salt. Add paneer cubes and marinate for at least 30 minutes.

Thread paneer onto skewers and grill or pan-fry until golden brown and slightly charred on all sides. Set aside.

Heat ghee or oil in a pan. Add chopped onions and sauté until golden brown.

Add pureed tomatoes and cook until oil separates from the masala.

Stir in cashew paste and cook for 2-3 minutes.

Add water to adjust consistency, then stir in heavy cream, crushed fenugreek leaves, and garam masala. Simmer for 5 minutes.

Gently add the grilled paneer cubes to the gravy. Add slit green chilies. Simmer for another 5-7 minutes until paneer is heated through and flavors meld.

Garnish with fresh cilantro. Serve hot with naan or rice.
