Ingredients
- Semolina (Rava)1 cup
- Rice Flour1/2 cup
- All-purpose Flour (Maida)1/4 cup
- Yogurt1/2 cup
- Wateras needed
- Saltto taste
- Potatoes3 medium
- Onions1 medium
- Green Chilies1-2
- Ginger1/2 inch
- Turmeric Powder1/4 tsp
- Mustard Seeds1/2 tsp
- Curry Leavesa few

In a bowl, combine semolina, rice flour, and all-purpose flour. Add yogurt and salt. Gradually add water to form a smooth, thin batter. Let it rest for 15-20 minutes.

Boil and mash the potatoes. Sauté finely chopped onions, green chilies, and ginger. Add turmeric powder, mustard seeds, and curry leaves. Mix in the mashed potatoes and salt.

Heat a non-stick griddle or tawa. Pour a ladleful of rava batter and spread it thinly.

Drizzle oil around the edges. Cook until golden brown and crispy.

Spoon the potato filling onto one half of the dosa. Fold the other half over.

Serve hot with sambar or chutney.
