Ingredients
- Canned chickpeas2 cans (15 oz each), drained and rinsed
- All-purpose flour (Maida)2 cups
- Yogurt2 tbsp
- Baking powder1/2 tsp
- Vegetable oil2 tbsp for dough + for deep frying
- Onion1 medium, finely chopped
- Tomato puree1/2 cup
- Ginger-garlic paste1 tbsp
- Chole masala powder1.5 tbsp
- Garam masala1/2 tsp
- Turmeric powder1/4 tsp
- Cumin powder1/2 tsp
- Fresh cilantrofor garnish
- Saltto taste

For the Bhature dough: Mix maida, yogurt, baking powder, salt, and 2 tbsp oil. Knead into a soft dough using water as needed. Let it rest for 15 minutes.

For the Chole: Heat oil in a pan. Add chopped onion and sauté until translucent. Add ginger-garlic paste and sauté for 30 seconds.

Add tomato puree, chole masala, cumin powder, turmeric powder, and salt. Cook for 5 minutes.

Add drained chickpeas and garam masala. Mash some chickpeas lightly. Add a little water if needed to adjust consistency. Simmer for 5-7 minutes.

Garnish with fresh cilantro.

For the Bhature: Divide the dough and roll into thick oval shapes.

Heat oil for deep frying. Fry the bhature until golden brown and puffed.
